Description

This Gooey Butter Cake is a decadent, melt-in-your-mouth dessert featuring a buttery yellow cake base topped with a rich, creamy cream cheese layer dusted with powdered sugar. Perfect for any occasion, it combines a tender cake with a gooey, sweet topping that’s sure to satisfy your sweet tooth.

Ingredients

Scale

Cake Layer

  • 1 box yellow cake mix
  • 2 large eggs
  • ⅓ cup butter, melted

Cream Cheese Layer

  • 8 ounce Philadelphia cream cheese, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup butter, melted
  • ¼ teaspoon salt
  • 4 cups powdered sugar

Instructions

  1. Preheat oven: Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan thoroughly on all sides to prevent sticking.
  2. Mix the base cake layer: In a large mixing bowl, combine the yellow cake mix with 2 large eggs and ⅓ cup of melted butter. Mix well until fully incorporated. Press the batter evenly into the prepared baking pan using your hands or a spatula to cover the entire surface.
  3. Mix the cheesecake layer: In a separate bowl, beat together the cream cheese, eggs, vanilla extract, melted butter, and salt until smooth and creamy. Gradually add the powdered sugar while mixing to create a thick, smooth topping. Pour this cream cheese mixture evenly over the cake layer in the pan.
  4. Bake: Place the baking pan in the preheated oven and bake for 40 to 45 minutes, or until the edges turn golden brown and the center is set but may be slightly sunken to maintain the gooey texture.
  5. Finish and serve: Remove the cake from the oven and allow it to cool completely. Once cooled, dust the top with additional powdered sugar. Cut into squares and serve.

Notes

  • Use room temperature cream cheese to ensure a smooth cream cheese layer without lumps.
  • Press the cake batter evenly to create a uniform base layer for the gooey topping.
  • The cake’s center may sink slightly during baking, which is normal and contributes to the gooey texture.
  • Let the cake cool completely before serving to allow it to set properly.
  • Store leftovers covered in the refrigerator for up to 3 days.
