Description

This Lamb Chops Marinade recipe features tender lamb chops infused with a flavorful garlic and herb marinade. The chops are seared to perfection in a cast-iron skillet with olive oil and butter, resulting in a juicy, aromatic main dish perfect for any occasion.

Ingredients

Scale

For the Lamb Chops

  • 8 lamb chops, each approx. 1-inch thick
  • Salt and pepper, to season
  • ¼ cup olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, minced
  • 1 tablespoon fresh rosemary, minced
  • 1 tablespoon olive oil, for cooking
  • 2 tablespoons butter, for cooking

Instructions

  1. Season: Generously season both sides of your lamb chops with salt and pepper to enhance flavor.
  2. Prepare the garlic herb marinade: In a small bowl, mix together the olive oil with the freshly minced garlic and fresh herbs. Use a pastry brush to brush both sides of the lamb chops evenly. Discard any remaining marinade and allow the chops to marinate at room temperature for 30 minutes to absorb the flavors.
  3. Cook: Heat a large cast-iron skillet or frying pan over medium-high heat. Add the olive oil and swirl to coat the surface. When the oil starts to smoke lightly, add the lamb chops carefully. Cook until lightly browned on one side, approximately 3-4 minutes. Add butter to the skillet, flip each chop, and continue cooking for another 4-5 minutes or until the internal temperature reaches 125°F for medium-rare or 135°F for medium, using a digital meat thermometer.
  4. Rest: Remove lamb chops from the skillet and transfer to a plate. Let them rest for at least 5 minutes to allow juices to redistribute, ensuring tender and juicy meat.
  5. Serve: Serve the lamb chops with your choice of accompaniments such as homemade mint chutney or other favorite dipping sauces. Enjoy your flavorful and tender meal!

Notes

  • If marinating for longer than 30 minutes, cover the lamb chops and refrigerate to keep them safe.
  • For even cooking, bring the lamb chops to room temperature before cooking if refrigerated.
  • You can marinate the lamb chops for up to 24 hours for enhanced flavor.
  • Store any leftovers in an airtight container in the refrigerator for 3-4 days to maintain freshness.
