Description

This Garlic & Bacon Spinach Dip is a creamy, cheesy, and irresistible appetizer that’s perfect for parties, game days, or any gathering. Loaded with flavor from crispy bacon, sautéed spinach, roasted garlic, and Parmesan cheese, this warm dip is sure to be a crowd-pleaser.


Ingredients

  • 6 slices bacon
  • 4 cups fresh spinach
  • 8 ounces full-fat brick cream cheese, softened
  • 1/3 cup plain full-fat regular or Greek yogurt (or sour cream)
  • 1/4 cup mayonnaise
  • 3/4 cup shredded or shaved Parmesan cheese, divided
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 3 cloves roasted garlic, chopped
  • Toasted pita crackers, chips, carrots, celery, etc. (for serving)

Instructions

  1. Preheat and Cook Bacon: Preheat oven to 350°F (177°C). Cook bacon in a skillet over medium heat until crisp. Drain on paper towels, reserving 1 tablespoon of bacon grease in the skillet. Chop the cooled bacon into bite-sized pieces.
  2. Wilt Spinach: Add the spinach to the skillet with the reserved bacon grease and cook over low heat for 1-2 minutes, or until wilted. Set aside.
  3. Combine Ingredients: In a large bowl, beat the cream cheese, yogurt (or sour cream), and mayonnaise together with an electric mixer until smooth. Add ½ cup of the Parmesan cheese, salt, pepper, and roasted garlic. Fold in the wilted spinach and all but 2 tablespoons of the chopped bacon.
  4. Assemble and Bake: Transfer the dip to a 2.5-quart baking dish (9-inch square pan, 9-inch cast iron skillet, or similar). Bake for 18 minutes. Remove from the oven, sprinkle with the remaining Parmesan cheese and bacon, and bake for an additional 5-8 minutes, or until bubbly around the edges.
  5. Serve: Serve the dip warm with your favorite dippers, such as toasted pita crackers, chips, carrots, and celery.

Notes

  • Spinach: You can use fresh or frozen spinach. If using frozen, thaw and squeeze out excess moisture before using.
  • Individual Portions: Instead of baking in a large dish, divide the dip into individual ramekins and bake for the same amount of time.
  • Storage: Leftovers can be stored in the refrigerator for up to 3 days. Reheat in a 300°F (149°C) oven until warmed through.
