Ingredients

Units Scale
  • 3 tablespoons salted butter
  • 3 tablespoons vegetable oil
  • 4 large onions, sliced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon minced garlic
  • 4 cups chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 1/2 cups white rice
  • 1 cup heavy cream
  • 3 cups cooked chicken, shredded into bite-size pieces
  • 16 ounces block of Swiss cheese, shredded
  • Parsley, for garnish (optional)

Instructions

  1. Caramelize Onions:
    1. Add the butter and vegetable oil to a large pan. Melt over medium-low heat.
    2. Once melted, add the sliced onions and stir to coat.
    3. Let it sit over medium-low heat for 10 minutes without stirring.

    5. Add the salt, pepper, and minced garlic. Stir for 30 seconds.
  2. Cook Rice Mixture:
    1. Add the chicken broth, Worcestershire sauce, and rice to the pan. Stir to combine.
    2. Bring to a boil, then reduce heat to low.
    3. Cover and cook for 20 minutes.
  3. Combine Ingredients:
    1. Preheat oven to 350°F (175°C).
    2. Once the rice is cooked, add the heavy cream and shredded chicken. Stir to combine.
  4. Assemble Casserole:
    1. Spray a 9×13 inch baking dish with non-stick cooking spray.
    2. Scoop the rice mixture into the baking dish.
    3. Sprinkle the shredded Swiss cheese evenly over the top.
  5. Bake:
    1. Place the dish in the preheated oven and bake until the cheese is melted and golden brown, about 10 minutes.
  6. Garnish and Serve:
    1. Sprinkle with parsley (optional).
    2. Serve and enjoy.

Notes

  • For deeper caramelized onions, cook them longer, stirring occasionally.
  • You can use leftover rotisserie chicken or any cooked chicken you have on hand.
  • Adjust the amount of Swiss cheese to your liking.
  • For a richer flavor, use Gruyère cheese instead of Swiss.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
