Description

This festive Christmas Jello Poke Cake combines a moist white cake with vibrant strawberry and lime jello injected into holes poked throughout the cake, creating beautiful colorful pockets of flavor. Topped with creamy white frosting and cheerful Christmas sprinkles, this easy-to-make dessert is perfect for holiday celebrations, offering a delightful blend of textures and refreshing fruity taste.

Ingredients

Scale

Cake

  • 16.25 ounce white cake mix, plus ingredients called for on box (eggs, oil, water as per box instructions)

Jello Mixtures

  • 3 ounce strawberry jello mix
  • 3 ounce lime jello mix
  • 2 cups boiling water, divided
  • 1 cup cold water, divided

Topping

  • 16 ounce white frosting
  • Christmas sprinkles, as desired

Instructions

  1. Prepare Cake: Preheat your oven and prepare the white cake mix according to the package instructions. Pour the batter into a greased 9×13 inch pan and bake until the top is golden and a toothpick inserted in the center comes out with only a few moist crumbs, not wet batter. Remove from oven and allow the cake to cool for 15 minutes.
  2. Make Strawberry Jello: In a medium bowl, mix the strawberry jello mix with 1 cup boiling water. Whisk vigorously for 2 minutes until the powder fully dissolves. Stir in 1/2 cup cold water and set aside.
  3. Make Lime Jello: Repeat the jello preparation process with the lime jello mix in a separate bowl, combining with 1 cup boiling water and then 1/2 cup cold water. Whisk well and set aside.
  4. Poke Holes in Cake: Using the handle of a wooden spoon, poke evenly spaced holes all over the warm cake, going about 1 inch deep but not through the bottom.
  5. Pour Jello Into Holes: Alternate spooning or pouring the prepared strawberry and lime jello mixtures into the holes in the cake until all the jello is used and has seeped into the cake.
  6. Chill to Set Jello: Refrigerate the cake for at least 3 hours or until the jello has fully set inside the cake.
  7. Frost and Decorate: Once set, spread the white frosting evenly over the top of the cake. Decorate with Christmas sprinkles as desired, then slice and serve chilled.

Notes

  • Store leftovers covered tightly in the refrigerator for up to 3 days to maintain freshness and texture.
  • Allow the cake to cool slightly before poking holes to prevent cracking.
  • Use a spoon or a measuring cup with a spout for easier pouring of jello into the holes.
  • For a more festive look, use holiday-themed sprinkles or edible glitter.
