- 7 cups Rice Krispies cereal
- 2 tablespoons unsalted butter
For the Frosting:
- 1/2 cup unsalted butter, softened
- 3–4 cups powdered sugar
- 1/4 cup milk
- 1 teaspoon vanilla extract
- Green food coloring (or your preferred color)
- Easter egg candies
Instructions
- Prep and Melt: Grease cupcake pans with cooking spray. In a large microwave-safe bowl, melt marshmallows and butter in 30-second intervals, stirring until smooth.
- Combine with Cereal: Add Rice Krispies cereal to the melted marshmallow mixture and stir until well combined.
- Shape Nests: Spoon the mixture into the greased cupcake pans and press down with wax paper to form nests. Let set for 30 minutes.
- Make Frosting: In a bowl, cream together softened butter, 2 cups of powdered sugar, milk, and vanilla extract until smooth. Gradually add remaining powdered sugar until desired consistency is reached. Tint with green food coloring.
- Decorate: Pipe or spoon frosting onto the Rice Krispie nests. Decorate with Easter egg candies.
