  • 1/2 teaspoon cumin
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon turmeric
  • 1/8 teaspoon cayenne pepper

For the Rice:

  • 1 cup uncooked long grain white rice
  • 1 medium zucchini, coarsely grated (about 1 1/2 cups grated)
  • 2 cups chicken broth

Instructions

  1. Grease the baking dish: Preheat the oven to 375°F (190°C) and grease a 9 x 13-inch baking dish or spray with nonstick cooking spray.
  2. Marinate the chicken: In the prepared dish, toss chicken with lemon juice, olive oil, herbs, spices, and seasonings. Let it sit for 30 minutes.
  3. Add rice and zucchini: Combine uncooked rice, grated zucchini, and chicken broth with the marinated chicken in the baking dish.
