- 5 ounces kataifi pastry (shredded phyllo dough), chopped and separated
- 2 ounces unsalted butter
- 12 ounces pistachio paste
- 3/4 ounce tahini (approximately 0.8 oz)
- Pinch of salt
- 1 pound dark or milk chocolate, melted
- Optional: Melted white, green, or pink chocolate for decoration
Instructions
- Toast Kataifi: Melt butter in a large skillet over medium heat. Add kataifi pastry and toast, stirring frequently, until golden brown and crispy.
- Make Pistachio Filling: In a bowl, combine pistachio paste, tahini, and salt. Add the toasted kataifi and mix well.
- Prepare Chocolate Shells: Melt half of the chocolate. (Optional: Drizzle melted colored chocolate into the bottom of two large chocolate bar molds for decoration.) Divide melted chocolate between the molds, tilting to coat the sides and bottom. Pour out any excess. Refrigerate for 10 minutes to set the chocolate shells.
- Fill and Seal: Melt the remaining chocolate. Fill the chocolate shells with the pistachio-kataifi mixture, pressing gently. Pour melted chocolate over the filling to seal the bars. Smooth the top and remove any excess chocolate.
- Chill and Unmold: Refrigerate for another 10-15 minutes until the chocolate is fully set. Carefully unmold the chocolate bars.
