Description

These Date Energy Balls are a simple, nutritious snack packed with natural sweetness and healthy fats. Made with peanut butter, dates, and cacao powder, they provide a perfect energy boost for anytime snacking. Rolled in desiccated coconut for a delightful texture, these no-bake balls are easy to prepare and great for on-the-go nourishment.

Ingredients

Scale

Ingredients

  • 130 g peanut butter (or nut butter of choice)
  • 250 g pitted dates (deglet nour or medjool)
  • 2 tbsp cacao powder (or cocoa powder)
  • 1 tbsp maple syrup
  • 23 tbsp desiccated coconut

Instructions

  1. Prepare the dough: Blend all the ingredients except the desiccated coconut in a food processor until the mixture forms a thick, sticky dough.
  2. Shape the balls: Divide the dough into 12 even-sized portions and roll each portion into a smooth ball using your hands.
  3. Coat with coconut: Spread the desiccated coconut on a plate and roll each ball in the coconut to coat evenly.
  4. Chill before serving: Refrigerate the energy balls for 30 to 60 minutes to allow them to firm up and develop flavor before enjoying.

Notes

  • Use fresh, soft dates like medjool for easier blending and a sweeter taste.
  • Adjust the amount of maple syrup based on your desired sweetness.
  • Store the energy balls in an airtight container in the fridge for up to one week.
  • For a nuttier flavor, try almond or cashew butter instead of peanut butter.
  • Feel free to add extras like chia seeds or chopped nuts for added texture and nutrition.
