  • 1 English cucumber – sliced into rounds then quartered
  • 2 cups grape tomatoes – sliced in half
  • 1/2 cup red onion – sliced into thin strips
  • 2 Tbsp chopped parsley

For The Dressing:

  • 1/4 cup extra virgin olive oil
  • 3 Tbsp red wine vinegar
  • 1 Tbsp granulated sugar – or honey
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper

Instructions

  1. Prepare the Vegetables: Slice the cucumber, grape tomatoes, and red onion as directed. Place them in a large mixing bowl.
  2. Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, sugar or honey, dried basil, salt, and black pepper.
  3. Toss and Chill: Pour the dressing over the vegetables and toss gently to coat. Cover the bowl and refrigerate for at least 2 hours to allow the flavors to meld.
