Sweet Potato Fries:

  • 2 large sweet potatoes, cut into sticks
  • 2 Tablespoons olive oil*
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt & black pepper
  • Extra sea salt (for serving)
  • Fresh cilantro, chopped (for serving)

Avocado Dip:

  • 2 garlic cloves, crushed
  • 1 ripe avocado
  • 1/4 cup (60 ml) plain yogurt
  • 1 Tablespoon fresh lemon juice
  • Salt and freshly ground pepper

Instructions

  1. Preheat the oven: To 425°F (220°C) and position the rack in the upper third. Line a baking sheet with parchment paper.
  2. Cut sweet potatoes: Into sticks, then toss with olive oil, paprika, garlic, salt, and pepper.
  3. Bake: Lay sweet potatoes on the baking sheet, bake until brown and crisp, then flip and bake until the other side is crisp.
  4. Make avocado dip: Process garlic, add avocado, yogurt, lemon juice, salt, and pepper. Mix until smooth.
  5. Serve: Sprinkle sea salt and cilantro over fries, serve with avocado dip. Enjoy!
