Sweet Potato Fries:
- 2 large sweet potatoes, cut into sticks
- 2 Tablespoons olive oil*
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Salt & black pepper
- Extra sea salt (for serving)
- Fresh cilantro, chopped (for serving)
Avocado Dip:
- 2 garlic cloves, crushed
- 1 ripe avocado
- 1/4 cup (60 ml) plain yogurt
- 1 Tablespoon fresh lemon juice
- Salt and freshly ground pepper
Instructions
- Preheat the oven: To 425°F (220°C) and position the rack in the upper third. Line a baking sheet with parchment paper.
- Cut sweet potatoes: Into sticks, then toss with olive oil, paprika, garlic, salt, and pepper.
- Bake: Lay sweet potatoes on the baking sheet, bake until brown and crisp, then flip and bake until the other side is crisp.
- Make avocado dip: Process garlic, add avocado, yogurt, lemon juice, salt, and pepper. Mix until smooth.
- Serve: Sprinkle sea salt and cilantro over fries, serve with avocado dip. Enjoy!
