- 1 tablespoon Italian seasoning
- 1 cup freshly grated Parmesan cheese, divided
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat and Prep: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Season Potatoes: In a large bowl, combine olive oil, salt, pepper, garlic powder, Italian seasoning, and half of the Parmesan cheese. Add the halved potatoes and toss until well coated.
- Roast: Arrange potatoes cut-side down on the prepared baking sheet. Roast for 25-30 minutes, or until golden brown and crispy.
- Add Cheese and Finish: Sprinkle the remaining Parmesan cheese over the potatoes. Return to the oven for 5 minutes, or until the cheese is melted and golden.
