Description

These Crispy Parmesan Potatoes are a simple yet incredibly flavorful side dish that’s perfect for any meal. Roasted to golden perfection with a crispy Parmesan cheese crust, these potatoes are a crowd-pleaser and incredibly easy to make.


Ingredients

  • 3 pounds small red potatoes, washed and halved (or small yellow potatoes)
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1/2 teaspoon garlic powder
  • 1 tablespoon Italian seasoning
  • 1 cup freshly grated Parmesan cheese, divided
  • 2 tablespoons fresh parsley, chopped

Instructions

  • Preheat and Prep: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • Season Potatoes: In a large bowl, combine olive oil, salt, pepper, garlic powder, Italian seasoning, and half of the Parmesan cheese. Add the halved potatoes and toss until well coated.
  • Roast: Arrange potatoes cut-side down on the prepared baking sheet. Roast for 25-30 minutes, or until golden brown and crispy.
  • Add Cheese and Finish: Sprinkle the remaining Parmesan cheese over the potatoes. Return to the oven for 5 minutes, or until the cheese is melted and golden.
  • Serve: Garnish with fresh parsley and serve warm.
