Scale
- 2 large boneless, skinless chicken breasts
- 1/4 teaspoon garlic powder
- Salt and pepper, to taste
- All-purpose flour, for dredging
- 1 tablespoon olive oil
- 1 tablespoon butter
- 3 cloves garlic, minced
- 1/4 cup chicken broth
- 1/2 teaspoon Dijon mustard
- 3/4 cup heavy cream
- 1 medium tomato, chopped
- 1/4 teaspoon Italian seasoning
- 1 small handful fresh basil, chopped or torn
Instructions
- Prepare Chicken: Cut chicken breasts in half lengthwise to create 4 thinner cutlets. Season with garlic powder, salt, and pepper. Dredge the chicken in flour, shaking off any excess.
- Cook Chicken: Heat olive oil and butter in a skillet over medium-high heat. Add chicken cutlets and cook until golden brown on each side. Remove chicken from the pan and set aside.
- Make Sauce: Add garlic, Dijon mustard, and chicken broth to the skillet. Simmer for 30 seconds, stirring to scrape up any browned bits.
- Add Cream and Tomatoes: Pour in heavy cream, chopped tomatoes, Italian seasoning, and basil. Bring to a simmer, then return the chicken to the skillet.
- Simmer and Serve: Cook for about 5 minutes, or until the sauce thickens and the chicken is cooked through. Reduce heat if necessary to prevent the sauce from boiling too vigorously. Season with additional salt and pepper to taste. Serve immediately.
Notes
- Cream: Avoid substituting heavy cream with half-and-half or milk, as the sauce may curdle.
- Serving Suggestion: Serve this dish with pasta, rice, or mashed potatoes.
