Description

A delicious and simple spinach grilled cheese sandwich that combines the freshness of sautéed spinach with gooey mozzarella cheese, all melted between buttery toasted bread slices. Perfect for a quick lunch or snack.

Bread and Cheese

  • 2 slices bread
  • 1/2 cup grated mozzarella cheese

Vegetables

  • 1 cup fresh spinach

  • 1 tablespoon butter, room temperature (for bread)
  • 1 teaspoon olive oil or butter (for sautéing spinach)
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Sauté spinach: Heat a small amount of olive oil or butter in a saucepan over medium heat. Add the fresh spinach and sauté, stirring occasionally, until wilted and reduced in size. Season with salt and pepper. Remove from heat and wipe the pan clean.
  2. Butter bread slices: Generously butter the outsides of both bread slices. Place one slice buttered side down on a clean surface for assembling the sandwich.
  3. Layer cheese: Sprinkle half of the grated mozzarella cheese evenly over the unbuttered side of the bread slice.
  4. Add spinach: Spread the sautéed spinach evenly over the layer of cheese.
  5. Add remaining cheese: Sprinkle the remaining mozzarella cheese over the spinach, allowing some cheese to fall off if needed.
  6. Cook sandwich: Heat a skillet over medium heat. Place the assembled sandwich in the skillet and cook until the bottom is golden brown. Carefully flip and cook the other side until golden and the cheese is melted.
  7. Rest and slice: Remove the sandwich from the pan and let it rest on a cutting board for a couple of minutes before slicing and serving.

Notes

  • Frozen Spinach: You can substitute fresh spinach with frozen spinach. Use spinach from a bag (not a box) and sauté it as directed in the instructions.
  • Variations: Add red pepper flakes for a spicy kick; include cooked bacon; add mushrooms, artichokes, or tomatoes for extra flavor; or substitute some mozzarella with feta or parmesan cheese for a tangy twist.
