  • 1 (400 ml) can chickpeas, drained (reserve 5 tablespoons of the liquid and some chickpeas for garnish)
  • ¼ cup tahini sesame paste
  • ¼ cup basil pesto (plus more for garnish)
  • 4 tablespoons extra virgin olive oil (plus more for garnish)
  • 3 tablespoons freshly squeezed lemon juice
  • 1 large clove of garlic, roughly chopped
  • ½ teaspoon salt

Garnish

  • Reserved chickpeas
  • Roasted sesame seeds
  • Extra basil pesto
  • Extra olive oil

Instructions

  1. Prepare Ingredients: Drain the chickpeas, reserving 5 tablespoons of the liquid and some whole chickpeas for garnish. Roughly chop the garlic and measure out the tahini, basil pesto, olive oil, lemon juice, and salt.
  2. Blend the Hummus: Place the drained chickpeas, reserved chickpea liquid, basil pesto, tahini, olive oil, lemon juice, garlic, and salt into a blender or food processor. Puree the mixture until it becomes smooth, well blended, and creamy, scraping down the sides as needed to ensure an even texture.
  3. Serve and Garnish: Transfer the creamy pesto hummus into a serving bowl. Drizzle additional olive oil over the top for richness. Garnish with the reserved whole chickpeas, a sprinkle of roasted sesame seeds, and a few spoonfuls of basil pesto for an attractive and flavorful finish.
