Description

This Creamy Lemon Parmesan Cod is a simple yet elegant dish that’s perfect for a weeknight meal. Flaky cod fillets are pan-seared and then coated in a rich and flavorful lemon-Parmesan cream sauce.


Ingredients

  • 1 pound cod fillets (or slightly over), cut into 4 equal pieces
  • Salt and pepper, to taste
  • 1/2 tablespoon all-purpose flour, plus extra for dredging
  • 3 tablespoons butter, divided
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 tablespoon lemon juice
  • 1/4 teaspoon Italian seasoning
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley

Instructions

  • Prep Cod: If possible, let cod fillets sit at room temperature for 15 minutes before cooking. Season with salt and pepper, then dredge in flour, shaking off excess.
  • Cook Cod: Heat 2 tablespoons of butter in a skillet over medium-high heat. Add cod fillets and cook for 2 minutes per side, or until lightly golden. Remove cod and set aside.
  • Make Sauce: Reduce heat to medium and add remaining butter to the skillet. Stir in garlic and ½ tablespoon of flour; cook for 1 minute. Gradually whisk in heavy cream, lemon juice, and Italian seasoning. Simmer for 2-3 minutes, or until slightly thickened.
  • Combine and Finish: Stir in Parmesan cheese and parsley. Return cod to the skillet and cook until flaky, spooning sauce over the fillets. Season with additional salt and pepper to taste.

Notes

  • Cod: Slightly over a pound of cod will work fine for this recipe.
  • Cream: Avoid substituting heavy cream with half-and-half or milk, as the sauce may curdle due to the acidity of the lemon juice.
  • Serving Suggestion: Serve this dish with rice pilaf, steamed vegetables, or a side salad.
