Protein
- 4 boneless, skinless chicken thighs
Vegetables & Aromatics
- 2 cloves garlic minced
- 1/2 cup sun-dried tomatoes drained and thinly sliced
- 1/4 cup fresh basil leaves chopped
Dairy & Fats
- 1/2 cup heavy cream
- 1/4 cup Parmesan grated
Liquids & Spices
- 1 tbsp olive oil
- 1 cup chicken stock
- 1 tbsp Italian seasoning
- 1 tsp oregano
- 1/4 tsp red pepper flakes
Thickening & Seasonings
- 1 tbsp cornstarch
- Salt and black pepper to taste
Instructions
- Heat and sear chicken: Heat a skillet over medium-high heat and add olive oil. When hot, add chicken thighs and brown for 2-3 minutes on each side. Season with salt and pepper. Remove from skillet and set aside.
- Sauté aromatics and tomatoes: In the same skillet, add minced garlic, Italian seasoning, oregano, red pepper flakes, and sun-dried tomatoes. Sauté for 2-3 minutes until fragrant.
- Add liquids and cheese: Pour in chicken stock and heavy cream, stirring well. Add grated Parmesan cheese and immediately whisk in cornstarch until fully incorporated.
- Simmer the chicken: Return chicken thighs to the skillet, ensuring they are covered with sauce. Reduce heat to low, cover with a lid, and cook for 15-20 minutes or until chicken is cooked through and tender. Stir occasionally to prevent burning.
- Finish and serve: Once cooked, stir in chopped fresh basil leaves. Remove from heat and spoon the sauce over the chicken thighs. Garnish with additional Parmesan, sun-dried tomatoes, and basil before serving.
Notes
- Ensure the chicken is cooked to an internal temperature of 165°F (74°C) for safety.
- You can substitute fresh sun-dried tomatoes for dried, but dried ones give a more concentrated flavor.
- The sauce thickens further as it cools; adjust consistency with more chicken stock if needed.
- This dish pairs well with cooked pasta, rice, or crusty bread.
