Instructions

  1. Cook Pasta: Bring a large pot of water to a boil, add 1 teaspoon salt, and cook the linguine according to package instructions until al dente. Reserve 1/2 cup pasta water, then drain, cover, and keep warm.
  2. Prepare Chicken: Flatten the chicken breasts to an even thickness using a meat mallet or rolling pin. Season all over with 1 1/2 tablespoons Cajun seasoning.
  3. Sear Chicken: Heat 2 teaspoons olive oil in a large skillet over medium-high heat. Once hot, add the chicken and sear for 4-5 minutes per side until browned. Reduce heat to low, cover, and cook until internal temperature reaches 165°F. Transfer to a cutting board, slice into thin strips, and keep warm.
  4. Make Sauce Base: In the same skillet, add the butter and minced garlic. Sauté for 30-60 seconds until fragrant, then add diced tomatoes and cook for another 2 minutes.
  5. Prepare Cream Sauce: Add heavy whipping cream, the remaining Cajun seasoning to taste, and grated Parmesan cheese. Bring to a gentle simmer, stirring until the cheese melts and the sauce thickens slightly. Season with salt and pepper if needed.
  6. Combine and Serve: Add sliced chicken and cooked pasta to the sauce. Toss to coat and heat through. If desired, add reserved pasta water a little at a time to thin the sauce. Garnish with freshly grated Parmesan and chopped parsley before serving.
