Instructions

- Prepare Chicken: Flatten the chicken breasts to an even thickness using a meat mallet or rolling pin. Season all over with 1 1/2 tablespoons Cajun seasoning.
- Sear Chicken: Heat 2 teaspoons olive oil in a large skillet over medium-high heat. Once hot, add the chicken and sear for 4-5 minutes per side until browned. Reduce heat to low, cover, and cook until internal temperature reaches 165°F. Transfer to a cutting board, slice into thin strips, and keep warm.
- Make Sauce Base: In the same skillet, add the butter and minced garlic. Sauté for 30-60 seconds until fragrant, then add diced tomatoes and cook for another 2 minutes.
- Prepare Cream Sauce: Add heavy whipping cream, the remaining Cajun seasoning to taste, and grated Parmesan cheese. Bring to a gentle simmer, stirring until the cheese melts and the sauce thickens slightly. Season with salt and pepper if needed.
