- 1 cup boiling water
- ½ cup cold water

- 1 (14 oz) can whole cranberry sauce
- 1 cup chopped walnuts, divided (or pecans)
Cream Cheese Topping Layer
- 8 oz cream cheese
- 1 cup powdered sugar
- 1 cup heavy whipping cream
Instructions
- Prepare the dish: Spray a 9×13 inch baking dish or a 2-quart casserole dish with cooking spray and set aside to prevent sticking.
- Make the jello base: In a large mixing bowl, dissolve the raspberry jello powder in 1 cup boiling water by stirring for 1 to 2 minutes until completely dissolved. Then stir in ½ cup cold water.
- Add fruits and nuts: Mix in the crushed pineapple (with juice), drained mandarin oranges, diced apple, and whole cranberry sauce. Reserve 2 tablespoons of the chopped walnuts for garnish, and fold the remainder into the jello mixture.
- Chill the jello: Pour the combined mixture into the prepared dish, cover with plastic wrap, and refrigerate for at least 2 hours or up to 24 hours until the jello has fully set.
- Prepare the cream cheese topping: Beat the heavy whipping cream until fluffy, gradually adding powdered sugar to create sweetened whipped cream.
- Incorporate the cream cheese: In a separate bowl, beat the cream cheese until soft and light, then gently fold it into the sweetened whipped cream to form a smooth topping.
- Assemble and serve: Spread the cream cheese topping evenly over the set jello salad. Sprinkle the remaining chopped walnuts on top. Refrigerate again if needed until ready to serve.
