- 1 cup cottage cheese (2% or 4%)
- 2 large eggs
- 1 teaspoon dried oregano
Instructions
- Prepare Oven and Baking Sheet:
- Preheat oven to 375°F (190°C).
- Line a half sheet (13 x 18 inch) baking sheet with parchment paper. Set aside.
- Blend Ingredients:
- In a food processor or high-speed blender, add the cottage cheese, eggs, and dried oregano.
- Process until smooth.
- Shape Flatbread:
- Pour the mixture into the middle of the prepared baking sheet.
- Spread with a spatula into a rectangle, about 8 x 10 inches. (Do not spread to the full sheet size; keep it in the center.)
- Bake:
- Bake for 25-30 minutes, or until golden brown and cooked through in the middle.
- Remove from the oven and let cool for 5 minutes.
- Assemble and Serve:
- Add your favorite sandwich ingredients on one half.
- Fold the other half of the flatbread over to create a sandwich.
- Cut the sandwich in half.

Notes
- Store: It’s best served fresh, but you can store it on a large sheet or platter between two pieces of parchment paper.
- You can enjoy it cold or reheat it in an air fryer for 1-2 minutes at 350°F (175°C).
