Description

Ingredients

  • 1 cup cottage cheese (2% or 4%)
  • 2 large eggs
  • 1 teaspoon dried oregano

Instructions

  1. Prepare Oven and Baking Sheet:
    1. Preheat oven to 375°F (190°C).
    2. Line a half sheet (13 x 18 inch) baking sheet with parchment paper. Set aside.
  2. Blend Ingredients:
    1. In a food processor or high-speed blender, add the cottage cheese, eggs, and dried oregano.
    2. Process until smooth.
  3. Shape Flatbread:
    1. Pour the mixture into the middle of the prepared baking sheet.
    2. Spread with a spatula into a rectangle, about 8 x 10 inches. (Do not spread to the full sheet size; keep it in the center.)
  4. Bake:
    1. Bake for 25-30 minutes, or until golden brown and cooked through in the middle.
    2. Remove from the oven and let cool for 5 minutes.
  5. Assemble and Serve:
    1. Add your favorite sandwich ingredients on one half.
    2. Fold the other half of the flatbread over to create a sandwich.
    3. Cut the sandwich in half.
    4. Enjoy!

Notes

  • Store: It’s best served fresh, but you can store it on a large sheet or platter between two pieces of parchment paper.
  • You can enjoy it cold or reheat it in an air fryer for 1-2 minutes at 350°F (175°C).
