These Cottage Cheese Egg Bites are a protein-packed and delicious breakfast or snack option. They’re easy to make, customizable with your favorite add-ins, and perfect for meal prep.

- 8–9 large eggs
- 1 cup cottage cheese
- 1/2 cup shredded cheddar cheese
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/3 cup cooked bacon, chopped (optional)
- 2 tablespoons chives, chopped (optional)
- Cooking spray
Instructions
- Preheat and Prep: Preheat oven to 350°F (175°C). Lightly grease a silicone muffin pan with cooking spray.
- Blend Ingredients: In a blender, combine eggs, cottage cheese, cheddar cheese, salt, and pepper. Blend until smooth.
- Fill Muffin Cups: Pour the egg mixture into the prepared muffin cups, filling each a little more than halfway. Sprinkle with bacon and chives (or other add-ins), if using.
- Bake: Bake for 20-22 minutes, or until the egg bites are set and slightly puffed.
- Cool and Serve: Let the egg bites cool in the muffin pan for a few minutes before carefully removing and serving.

- Add-ins: Customize your egg bites with various add-ins, such as sautéed vegetables, different types of cheese, or herbs and spices.
- Silicone Muffin Pan: A silicone muffin pan makes it easier to remove the egg bites. If you don’t have one, you can use a regular muffin pan greased with cooking spray.
- Make Ahead: These egg bites are perfect for meal prep. Store them in the refrigerator for up to 4 days and reheat in the microwave or oven when ready to eat.
- Freezing: You can also freeze the egg bites for longer storage. Thaw overnight in the refrigerator before reheating.
