Description

These Cottage Cheese Egg Bites are a protein-packed and delicious breakfast or snack option. They’re easy to make, customizable with your favorite add-ins, and perfect for meal prep.


Ingredients

  • 89 large eggs
  • 1 cup cottage cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/3 cup cooked bacon, chopped (optional)
  • 2 tablespoons chives, chopped (optional)
  • Cooking spray

Instructions

  1. Preheat and Prep: Preheat oven to 350°F (175°C). Lightly grease a silicone muffin pan with cooking spray.
  2. Blend Ingredients: In a blender, combine eggs, cottage cheese, cheddar cheese, salt, and pepper. Blend until smooth.
  3. Fill Muffin Cups: Pour the egg mixture into the prepared muffin cups, filling each a little more than halfway. Sprinkle with bacon and chives (or other add-ins), if using.
  4. Bake: Bake for 20-22 minutes, or until the egg bites are set and slightly puffed.
  5. Cool and Serve: Let the egg bites cool in the muffin pan for a few minutes before carefully removing and serving.

  • Silicone Muffin Pan: A silicone muffin pan makes it easier to remove the egg bites. If you don’t have one, you can use a regular muffin pan greased with cooking spray.
