Cottage Cheese Alfredo Sauce:
- 2 cups cottage cheese 4% fat
- 1/2 cup freshly grated Parmesan cheese
- 1 garlic clove
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Additional Ingredients:
- 1 pound linguine
- 4 tablespoons unsalted butter at room temperature
- 1/4 cup chopped fresh parsley (optional)
- Grated Parmesan cheese for serving (optional)
Instructions
- Prepare Cottage Cheese Alfredo Sauce: In a high-speed blender, combine cottage cheese, Parmesan cheese, butter, garlic, salt, and pepper. Blend until smooth.
- Cook Linguine: Boil a pot of salted water and cook linguine according to package instructions until al dente.
- Combine Sauce and Pasta: Drain the pasta, reserving 1 cup of cooking liquid. Return pasta to the pot, add the Alfredo sauce and some pasta water. Cook on low heat, stirring until the sauce thickens, about 3 minutes.
- Serve: Remove from heat, garnish with parsley and additional Parmesan cheese if desired, and serve.
