Cottage Cheese Alfredo Sauce:

  • 2 cups cottage cheese 4% fat
  • 1/2 cup freshly grated Parmesan cheese
  • 1 garlic clove
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Additional Ingredients:

  • 1 pound linguine
  • 4 tablespoons unsalted butter at room temperature
  • 1/4 cup chopped fresh parsley (optional)
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Prepare Cottage Cheese Alfredo Sauce: In a high-speed blender, combine cottage cheese, Parmesan cheese, butter, garlic, salt, and pepper. Blend until smooth.
  2. Cook Linguine: Boil a pot of salted water and cook linguine according to package instructions until al dente.
  3. Combine Sauce and Pasta: Drain the pasta, reserving 1 cup of cooking liquid. Return pasta to the pot, add the Alfredo sauce and some pasta water. Cook on low heat, stirring until the sauce thickens, about 3 minutes.
  4. Serve: Remove from heat, garnish with parsley and additional Parmesan cheese if desired, and serve.
