Description

This delicious Orange, Pistachio & Almond Cake is a delightful treat that combines the flavors of citrusy oranges with the nuttiness of pistachios and almonds. The moist and flavorful cake is topped with a sweet orange glaze, making it a perfect dessert for any occasion.


Ingredients

For the Cake:

  • 2 oranges
  • 3 eggs
  • 2/3 cup honey
  • 1 cup ground pistachios
  • 2 cups almond flour
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda

For the Topping:

  • 1 orange*
  • 1/2 cup orange juice
  • 2 tbsp honey

Instructions

  1. Rinse and Simmer Oranges: Rinse the oranges and simmer in water for 1 hour. Blend the oranges into a puree.
  2. Prepare Pistachios: Grind pistachios to a fine powder.
  3. Preheat and Grease: Preheat oven, grease a cake pan.
  4. Mix Ingredients: Combine orange puree, eggs, honey, pistachios, almond flour, vanilla, and baking soda.
  5. Bake: Pour batter into pan and bake for 1 hour.
  6. Prepare Topping: Simmer orange juice and honey. Brush over baked cake and top with orange slices.

Notes

  • You can decorate the top of the cake with additional chopped pistachios for extra crunch.
  • Make sure to cool the cake before serving to allow the flavors to meld together.
