For the Cake:
- 2 oranges
- 3 eggs
- 2/3 cup honey
- 1 cup ground pistachios
- 2 cups almond flour
- 1 tsp vanilla extract
- 1/2 tsp baking soda
For the Topping:
- 1 orange*
- 1/2 cup orange juice
- 2 tbsp honey
Instructions
- Rinse and Simmer Oranges: Rinse the oranges and simmer in water for 1 hour. Blend the oranges into a puree.
- Prepare Pistachios: Grind pistachios to a fine powder.
- Preheat and Grease: Preheat oven, grease a cake pan.
- Mix Ingredients: Combine orange puree, eggs, honey, pistachios, almond flour, vanilla, and baking soda.
- Bake: Pour batter into pan and bake for 1 hour.
- Prepare Topping: Simmer orange juice and honey. Brush over baked cake and top with orange slices.
Notes
- You can decorate the top of the cake with additional chopped pistachios for extra crunch.
