Cilantro Lime Dressing:

  • 1 batch Greek Yogurt Avocado Salad Dressing (double the cilantro, omit parsley)

Pasta Salad:

  • 1 375g box pasta (rotini, fusilli, or penne), cooked
  • 1 19 oz. can chickpeas, drained and rinsed
  • 1 12 oz. can corn, drained and rinsed
  • 1 medium cucumber, chopped
  • 1 small red onion, diced
  • 1/2 cup feta cheese or cojita cheese, crumbled
  • Cilantro leaves (optional, for garnish)
  • Lime juice (optional, to squeeze on top)

Instructions

  1. Make the Cilantro Lime Dressing: Blitz ingredients in a blender or food processor. Set aside.
  2. Prepare the Pasta Salad: Combine cooked pasta, chickpeas, corn, cucumber, and red onion in a large bowl.
  3. Drizzle with Dressing: Pour the cilantro lime dressing over the salad ingredients and toss until well-coated.
  4. Add Feta Cheese: Sprinkle feta cheese on top and gently mix it into the salad.
