Description

Instructions

  1. Combine Wet Ingredients: In a large bowl, whisk together the oil, melted chocolate, and granulated sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract.
  2. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.
  3. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix. 
  4. Chill Dough: Cover the dough and chill for at least a few hours or overnight.
  5. Preheat and Prep: Preheat oven to 350°F (175°C). Grease baking sheets or line them with parchment paper or a silicone liner.
  6. Shape and Coat: Roll teaspoons of chilled dough into small balls. Roll each ball in confectioners’ sugar until well coated.
  7. Bake: Place the coated dough balls on the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the cookies are set and crackled. Do not overbake.
  8. Cool and Serve: Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
