Description

Chicken Gloria is a luxurious and comforting dish featuring tender chicken cutlets smothered in a rich mushroom cream sauce and topped with melted Muenster cheese. Perfect for a special occasion or a cozy family dinner, this recipe combines simple ingredients to create a truly memorable meal.

  • 6 chicken cutlets, about 3 pounds
  • Salt and pepper to taste
  • 1 cup all-purpose flour, divided
  • 6 tablespoons unsalted butter, divided
  • 1/2 cup minced onion, about 1/2 medium onion
  • 8 ounces baby bella mushrooms, diced
  • 3 teaspoons minced garlic, about 3 cloves
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/4 cup dry sherry (see notes for substitution)
  • 6 slices Muenster cheese

Instructions

  1. Prepare Oven and Dish: Preheat oven to 375°F (190°C) and spray a 9×13-inch baking dish with cooking spray.
  2. Season and Flour Chicken: Season the chicken with salt and pepper. Reserve 3 tablespoons of flour and coat the chicken with the remaining flour.
  3. Brown Chicken: Heat 3 tablespoons of the butter in a large skillet over medium-high heat. Cook the breaded chicken in the butter for 3-4 minutes on each side, just to brown them (do not cook the chicken all the way through).
  4. Place Chicken in Dish: Place the browned chicken into the prepared baking dish.
  5. Sauté Onions and Mushrooms: Add the remaining 3 tablespoons of butter to the skillet. Add the onion and mushrooms to the skillet with the butter. Cook the onion and mushrooms until they are tender, about 4-5 minutes.
  6. Add Garlic: Add the garlic and cook for just one minute, until the garlic is fragrant.
  7. Make Roux: Whisk the reserved 3 tablespoons of flour into the butter mixture in the skillet to create a paste.
  8. Make Sauce: Slowly whisk the heavy cream, chicken broth, and dry sherry into the paste mixture to create a sauce, and season with salt and pepper to taste.
  9. Pour Sauce Over Chicken: Pour the sauce over the chicken in the baking dish.
  10. Add Cheese: Place the slices of Muenster cheese over each chicken cutlet, cover the dish with foil, and bake for 20 minutes.
  11. Broil Cheese: Remove the foil from the dish, set the oven to broil, and broil for 2-3 minutes until the cheese is melted and bubbly.
  12. Cool and Serve: Remove the dish from the oven and let it cool for a few minutes before serving.

Notes

  • You can replace the Dry Sherry with 2 tablespoons vinegar and 2 tablespoons chicken broth.
  • For a richer sauce, use heavy cream instead of chicken broth.
  • You can use other types of cheese, such as provolone or Swiss cheese.
  • Serve with mashed potatoes, rice, or pasta for a complete meal.
