Description

This Chicken Cheesesteaks recipe offers a delicious twist on the classic Philly cheesesteak by using tender, thinly sliced chicken breasts cooked with sautéed onions and bell peppers, seasoned with Italian herbs, and topped with melted provolone cheese. Served on toasted hoagie rolls, this easy-to-make sandwich is perfect for a satisfying lunch or dinner.

Ingredients

Scale

Vegetables

  • 1 large onion, chopped
  • 3 bell peppers (red and green), chopped

Meat

  • 1 lb. boneless skinless chicken breasts, thinly sliced

Dairy

  • 6 slices provolone cheese

Pantry

  • 1 tbsp. extra-virgin olive oil
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tbsp. Italian seasoning
  • 4 hoagie rolls

Instructions

  1. Prepare the vegetables: In a large skillet over medium heat, heat the extra-virgin olive oil. Add the chopped onion and bell peppers and season with kosher salt and freshly ground black pepper. Cook, stirring occasionally, until the vegetables are very soft, about 8 to 10 minutes.
  2. Cook the chicken: Add the thinly sliced chicken breasts to the skillet along with the Italian seasoning. Stir to combine all ingredients well. Cook, stirring occasionally, until the chicken is golden and cooked through, no longer pink inside, approximately 10 minutes.
  3. Melt the cheese: Cover the cooked chicken and vegetables with the provolone cheese slices. Cover the skillet and allow the cheese to melt for about 1 minute.
  4. Assemble the sandwiches: Serve the cheesy chicken and pepper mixture hot on the hoagie rolls, dividing the filling evenly among the four rolls for four servings.

Notes

  • For extra flavor, you can toast the hoagie rolls lightly before assembling the sandwiches.
  • Feel free to add sliced mushrooms or jalapeños to the pepper and onion mixture for a different twist.
  • Italian seasoning can be substituted with a mix of dried oregano, basil, and thyme if unavailable.
  • Using thinly sliced chicken breasts ensures faster cooking and a more authentic cheesesteak texture.
  • Make sure to cover the skillet when melting the cheese to help it melt evenly and quickly.
