For the Chicken:

  • 1 pound (454 g) boneless skinless chicken breast (2 pieces)
  • 3/4 teaspoon (4 g) kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 tablespoon (15 ml) olive oil

For the Caesar Wrap:

  • 4 cups (128 g) romaine lettuce, 1/2-inch thick slices
  • 1 cup (240 ml) Caesar dressing, divided
  • 1 cup (165 g) baby tomatoes, halved
  • 1/4 cup (30 g) grated parmesan cheese
  • 1 cup (47 g) croutons
  • 4 large tortillas, about 10” in diameter

Instructions

  1. Prepare the Chicken
    Place one piece of chicken between two plastic sheets or in a large plastic bag. Use a meat tenderizer to flatten it to an even thickness of about ½-inch. Repeat the process with the second piece of chicken.
  2. Mix the Seasonings
    In a small bowl, combine the kosher salt, black pepper, garlic powder, and onion powder. Use this seasoning mix to generously season both sides of the chicken pieces.
  3. Cook the Chicken
    Heat a large skillet or grill pan over medium heat. Add olive oil and allow it to heat until shimmering but not smoking. Cook the chicken until golden brown, about 5 to 7 minutes on one side. Flip the chicken and cook for an additional 5 to 7 minutes, or until a meat thermometer reads an internal temperature of 160-165ºF (71-74ºC).
  4. Rest and Slice
    Remove the chicken from the skillet and let it rest for 10 minutes. Afterward, slice the chicken against the grain, then cut it into cubes. Refrigerate the chicken until ready to assemble the wrap.
  5. Dress the Lettuce
    Add the sliced romaine lettuce to a medium bowl and drizzle ¼ cup of Caesar dressing over it. Gently toss the lettuce to ensure even dressing.
  6. Warm the Tortillas
    Heat a large non-stick pan over medium heat. Warm each tortilla for about 15 to 30 seconds per side until pliable. Stack and cover the warmed tortillas with a kitchen towel to keep them soft and warm.
  7. Assemble the Wrap
    Lay each tortilla flat and evenly divide the dressed lettuce among them. Top with the diced chicken, halved baby tomatoes, grated parmesan cheese, and croutons. Drizzle the remaining dressing over the ingredients or serve it on the side for dipping. Fold in the sides of the tortilla, roll it tightly into a cigar shape, and secure with a toothpick if needed. Slice the wrap in half if desired before serving.
