- 4 cloves garlic, minced
- 8 ounces uncooked pasta (penne, shells, rigatoni, etc.)
- 1 cup low-sodium chicken broth
- 2 cups milk
- 2 cups broccoli florets (from 1 head of broccoli)
- 1/4 teaspoon ground nutmeg
- 2 cups shredded cheddar cheese
Instructions
- Cook Chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until browned and cooked through.
- Sauté Vegetables: Add onion and garlic to the skillet and cook until softened.
- Cook Pasta: Add pasta, chicken broth, and milk to the skillet. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until pasta is cooked through. Stir occasionally.
- Add Broccoli: Uncover the skillet and stir in broccoli florets. Cook for a few minutes more, until the liquid is absorbed and the broccoli is tender.
- Stir in Cheese and Season: Remove from heat and stir in nutmeg and cheddar cheese until melted and smooth. Taste and adjust seasoning with salt and pepper, if needed.
