Caramelized Onions and Gouda:

  • 1 medium-large yellow onion
  • 2 tablespoons unsalted butter
  • 80g shredded Gouda cheese

Instructions

  1. Make The Dough: In a bowl, combine water and sourdough starter. Add flour and salt, mix to form a dough. Knead and let rest.
  2. Stretch And Fold: Perform sets of stretch and folds with resting intervals.
  3. Caramelize Onions: Cook sliced onions in butter until browned and fragrant.
  4. Laminate + Bulk Ferment: Layer caramelized onions and Gouda onto dough, fold, and ferment.
  5. Pre-Shape and Shape: Shape the dough, rest, shape into a batard and place in a banneton.
  6. Prove + Cold Retard: Proof the loaf, then cold retard in the fridge.
  7. Bake: Preheat oven, score dough, bake covered and uncovered until done.
