- 1 (15.25 ounce) box cake mix
- 2 eggs
- ⅓ cup vegetable oil
- 1 cup add-ins (chocolate chips, M&M’s, and/or nuts) – optional
Instructions
- Preheat oven: Preheat oven to 350°F. Line a large half sheet baking pan with a silicone baking mat or parchment paper and set aside.
- Mix ingredients: In a large mixing bowl, combine the cake mix, eggs, and vegetable oil. Use a rubber spatula to stir until combined or beat with a hand mixer/stand mixer on low speed.
- Add mix-ins: Fold in any extra add-ins such as chocolate chips, M&M’s, or nuts, reserving about ¼ cup to press on top of the cookies later.
- Scoop dough: Use a medium cookie scoop to portion the dough onto the prepared baking sheet, placing cookies about 2 inches apart. Press the reserved add-ins on top of each cookie.
- Bake cookies: Bake for 9-11 minutes until cookies are set and lightly golden on the edges. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
Notes
- If using an 18.25 ounce box cake mix, increase vegetable oil to ½ cup for best results.
- Store the cookies in an airtight container at room temperature for up to 4 days.
- Flavor variations include: Vanilla cake mix with chocolate chips or sprinkles; Chocolate cake mix with nuts or peanut butter chips; Red velvet with white chocolate chips; Carrot cake with white chocolate chips and nuts; Lemon cake mix with white chocolate chips.
