Description

Quick and easy Cake Mix Cookies made with just a few simple ingredients. These soft and chewy cookies are customizable with your favorite add-ins like chocolate chips, M&M’s, or nuts, perfect for a delicious treat any time.

  • 1 (15.25 ounce) box cake mix
  • 2 eggs
  • ⅓ cup vegetable oil
  • 1 cup add-ins (chocolate chips, M&M’s, and/or nuts) – optional

Instructions

  1. Preheat oven: Preheat oven to 350°F. Line a large half sheet baking pan with a silicone baking mat or parchment paper and set aside.
  2. Mix ingredients: In a large mixing bowl, combine the cake mix, eggs, and vegetable oil. Use a rubber spatula to stir until combined or beat with a hand mixer/stand mixer on low speed.
  3. Add mix-ins: Fold in any extra add-ins such as chocolate chips, M&M’s, or nuts, reserving about ¼ cup to press on top of the cookies later.
  4. Scoop dough: Use a medium cookie scoop to portion the dough onto the prepared baking sheet, placing cookies about 2 inches apart. Press the reserved add-ins on top of each cookie.
  5. Bake cookies: Bake for 9-11 minutes until cookies are set and lightly golden on the edges. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

  • If using an 18.25 ounce box cake mix, increase vegetable oil to ½ cup for best results.
  • Store the cookies in an airtight container at room temperature for up to 4 days.
