Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil over high heat. Add the macaroni pasta and cook until al dente, about 2 minutes less than package instructions. Drain the pasta and rinse with cool water to stop the cooking process. Set aside.
- Make the Roux: In the same or a new pot, melt the butter over medium heat. Once melted, whisk in the flour until fully incorporated, creating a smooth paste. Continue whisking until the mixture turns golden, which should take about a minute.
- Add Seasonings: Whisk in paprika, salt, and black pepper. Cook the mixture until fragrant, roughly 30 seconds, stirring constantly to prevent burning.
- Create the Sauce: Slowly add the whole milk and buffalo sauce while whisking continuously. Keep whisking until the sauce warms and thickens, which will take approximately 5 minutes. The sauce should be thick enough to coat the back of a spoon.
