Crispy tater tots are layered with a savory sausage and egg mixture, then baked to golden perfection with a generous topping of melted cheese. It’s a crowd-pleasing recipe that’s easy to assemble and sure to become a family favorite.

Ingredients

Units Scale
  • 28 ounces frozen mini tater tots
  • 9 large eggs
  • 1/2 cup whole milk
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon onion powder
  • 16 ounces ground breakfast sausage, browned and drained
  • 2 1/2 cups shredded cheddar cheese, divided

Instructions

  1. Par-bake Tater Tots: Preheat oven to 350°F (175°C). Spread the mini tater tots on a baking sheet and bake for 10 minutes. Flip the tater tots and bake for another 10 minutes, or until lightly golden.
  2. Prepare Egg Mixture: In a medium bowl, whisk together the eggs, milk, salt, pepper, and onion powder until well combined.
  3. Combine with Sausage and Cheese: Add the browned sausage and 1 ¼ cups of the shredded cheddar cheese to the egg mixture. Stir until evenly distributed.
  4. Assemble Casserole: Pour the egg mixture into a greased 9×13 inch baking dish. Arrange the par-baked tater tots evenly over the top, covering the entire surface.
  5. Bake: Bake in the preheated oven for 40 minutes, or until the casserole is set and the tater tots are golden brown.
  6. Add Cheese and Finish: Sprinkle the remaining 1 ¼ cups of shredded cheddar cheese over the casserole and bake for an additional 5 minutes, or until the cheese is melted and bubbly.

Notes

  • You can use your favorite type of breakfast sausage for this recipe, such as pork sausage, turkey sausage, or chicken sausage.
  • If you don’t have mini tater tots, you can use regular-sized tater tots, but adjust the baking time accordingly.
  • For a vegetarian option, omit the sausage or substitute with a plant-based sausage alternative.
  • This casserole can be assembled ahead of time and baked when ready.
