Bacon:

Sausage:
- 8–10 cooked sausage links, chopped
Seasoning:
- Salt and pepper, to taste
Eggs:
- 4 eggs
Cheese:
- 1 cup shredded cheddar cheese or your favorite
Instructions
- Cook Bacon: In a large skillet, cook bacon until crispy, then remove from pan onto a paper towel.
- Cook Potatoes: Add potatoes to the skillet and cook until browned.
- Add Vegetables: If using, add diced onions and bell peppers, and cook until tender, about 5 minutes.
- Combine Ingredients: Stir in chopped sausage and bacon, heating through. Season with salt and pepper.
- Add Eggs: Make wells in the pan and carefully break eggs into each well. Cover the pan and cook over medium-low heat until the egg whites are set, about 8-10 minutes.
- Add Cheese: Sprinkle shredded cheese over the skillet and cook until melted.
- Serve: Serve immediately with sliced green onions, tomatoes, avocado, jalapenos, and parsley.
