Description

Ingredients

Bacon:

  • 46 strips bacon, cut into 1-inch pieces

Potatoes:

  • 20 oz refrigerated potatoes or 3-4 cups frozen hash browns

Vegetables:

  • 1/2 cup sweet onion, diced (optional)
  • 1/2 cup red bell pepper, diced (optional)

Sausage:

  • 810 cooked sausage links, chopped

Seasoning:

  • Salt and pepper, to taste

Eggs:

  • 4 eggs

Cheese:

  • 1 cup shredded cheddar cheese or your favorite

Instructions

  1. Cook Bacon: In a large skillet, cook bacon until crispy, then remove from pan onto a paper towel.
  2. Cook Potatoes: Add potatoes to the skillet and cook until browned.
  3. Add Vegetables: If using, add diced onions and bell peppers, and cook until tender, about 5 minutes.
  4. Combine Ingredients: Stir in chopped sausage and bacon, heating through. Season with salt and pepper.
  5. Add Eggs: Make wells in the pan and carefully break eggs into each well. Cover the pan and cook over medium-low heat until the egg whites are set, about 8-10 minutes.
  6. Add Cheese: Sprinkle shredded cheese over the skillet and cook until melted.
  7. Serve: Serve immediately with sliced green onions, tomatoes, avocado, jalapenos, and parsley.
  8. Storage: Store any leftovers in the refrigerator.
