  • Salt & pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 medium onion chopped

  • 1 (5.2 oz) package Boursin Fine Herbs & Garlic cheese, softened
  • 12 tablespoons chopped parsley, to taste, optional

  2. Cook the chicken: In a skillet over medium-high heat with oil and butter for 5-6 minutes per side or until cooked through. Transfer to a plate.
  3. Sauté the onions: In the same skillet for about 5 minutes until softened and browned.
  4. Add broth and cheese: To the skillet, stir until smooth. Let it simmer for 5 minutes. Add parsley if desired.
  5. Combine chicken and sauce: Return chicken to the skillet, warm through for a few minutes until the sauce thickens.
