- 2 large chicken breasts
- 1/2 teaspoon garlic powder
- Salt & pepper to taste
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/2 medium onion chopped
- 3/4 cup chicken broth (use low sodium if sensitive to salt)
- 1 (5.2 oz) package Boursin Fine Herbs & Garlic cheese, softened
- 1–2 tablespoons chopped parsley, to taste, optional
Instructions
- Cut the chicken breasts: In half lengthwise to get 4 thinner pieces. Season with garlic powder, salt, and pepper.
- Cook the chicken: In a skillet over medium-high heat with oil and butter for 5-6 minutes per side or until cooked through. Transfer to a plate.
- Sauté the onions: In the same skillet for about 5 minutes until softened and browned.
- Add broth and cheese: To the skillet, stir until smooth. Let it simmer for 5 minutes. Add parsley if desired.
- Combine chicken and sauce: Return chicken to the skillet, warm through for a few minutes until the sauce thickens.
- Season and serve: Adjust seasoning with salt and pepper, then serve immediately.
