  • 1/4 cup granulated sugar (50g)
  • 1 lemon zested (2 teaspoons zest)

  • 5 tablespoons unsalted butter (70g)
  • 1 1/4 cups all-purpose flour (150g)
  • 1/2 cup granulated sugar (100g)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup whole milk (240mL)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F. This ensures the oven is at the right temperature when you’re ready to bake the cobbler.
  2. Prepare the blueberry mixture: In a large bowl, combine the blueberries, sugar, and lemon zest. Stir until the blueberries are evenly coated with sugar and zest. Set this mixture aside to allow the flavors to meld while you prepare the batter.
  3. Melt the butter: Place the butter in an 8×8-inch baking dish. Put the dish in the preheated oven for about 10 minutes, or until the butter is completely melted. This creates a deliciously crispy bottom crust.
  4. Make the batter: While the butter is melting, whisk together the flour, sugar, baking powder, and salt in a medium mixing bowl. Add the milk and whisk until just combined. Be careful not to overmix, as this can lead to a tough cobbler.
  5. Assemble the cobbler: Carefully remove the baking dish with the melted butter from the oven. Pour the batter into the pan over the melted butter, but do not stir. Evenly distribute the blueberry mixture over the batter. If desired, sprinkle some coarse sugar on top for extra crunch and sweetness.
  6. Bake the cobbler: Place the dish in the oven and bake for 40 to 45 minutes. The cobbler is done when the batter is golden brown and a wooden pick inserted in the center comes out mostly clean. Some moisture is okay, as the cobbler will continue to set as it cools.

Notes

  • The butter may float to the top during baking and not reabsorb until the cobbler is almost done. This is normal, so don’t worry if it looks wet until the last few minutes of baking.

  • Adjust the sweetness by adding more sugar to the blueberries if needed.
  • For a stronger lemon flavor, add about half a tablespoon of lemon juice to the blueberries.
  • This recipe can be baked in a 9×13-inch pan. Reduce baking time to 30-35 minutes as the cobbler will be thinner.
