Description

A flavorful and satisfying beefy burrito inspired by Taco Bell’s Beefy Melt Burrito, packed with seasoned ground beef, rice, crispy Fritos, and melted cheese, all wrapped in a warm tortilla for a delicious meal.

Ingredients

Units Scale

Meat and Sauce

  • 1 pound lean ground beef
  • 1 (1 oz) packet taco seasoning
  • 1/4 cup water or beef broth

Filling

  • 1 cup refried beans (optional)
  • 2 cups cooked Mexican rice or instant Mexican rice

Burrito Assembly

  • 4 burrito-sized flour tortillas
  • 2 cups Fritos or Doritos
  • 1 cup cheese dip, warmed (like Tostitos)
  • 1 cup shredded Mexican cheese blend
  • 1/2 cup sour cream
  • Salsa, if desired

Instructions

  1. Cook the beef: In a sauté pan over medium heat, cook the ground beef, breaking it apart with a spatula until no longer pink, about 5-7 minutes.
  2. Add seasonings: Stir in the taco seasoning mix and water or beef broth, cook for one more minute to combine flavors.
  3. Incorporate beans: Mix in the refried beans; if the mixture is too thick, add a little more water to achieve desired consistency.
  4. Prepare rice: Warm the Mexican rice according to package instructions or from cooked leftovers.
  5. Warm tortillas: Microwave tortillas covered with a damp paper towel for 30 seconds until soft.
  6. Assemble burritos: Lay a tortilla flat, spread 2 tablespoons of the beef mixture in the center, add 2 tablespoons rice, then layer with Fritos, a large spoonful of cheese dip, shredded cheese, and a spoonful of sour cream.
  7. Wrap: Fold in the sides of the tortilla, then roll from one end tightly to form a burrito. Repeat with remaining tortillas and fillings.
  8. Optional tost: To add a crispy exterior, lightly toast each burrito in a skillet over medium heat until golden brown.
  9. Serve: Plate the burritos with salsa on the side if desired. Enjoy immediately.

Notes

  • Adjust spice levels by adding hot sauce or extra chili powder to the beef mixture.
  • For a healthier option, use reduced-fat cheese dip and low-fat sour cream.
  • You can add chopped onions or jalapeños to the beef for extra flavor.
  • To make it vegetarian, substitute the beef with seasoned plant-based crumbles or vegetables.
