Ingredients

Units Scale

For the Steak Tips:

  • 1 1/2 pounds sirloin steak, cut into 2-inch pieces
  • 1/4 cup balsamic vinegar
  • 2 tablespoons low-sodium soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon ground black pepper

For the Veggies:

  • 1 pound baby potatoes, halved
  • 1 bunch asparagus, trimmed
  • 1 medium red bell pepper, cut into chunks
  • 1 medium green bell pepper, cut into chunks
  • 1 medium red onion, cut into wedges
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. Marinate Steak: In a bowl, whisk together balsamic vinegar, soy sauce, garlic, honey, Dijon mustard, and black pepper. Add steak tips and marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
  2. Preheat and Prep: Preheat oven to 425°F (220°C).
  3. Season Vegetables: Toss potatoes, asparagus, bell peppers, and red onion with olive oil, salt, and pepper.
  4. Roast: Arrange marinated steak tips on one side of a large baking sheet and seasoned vegetables on the other side. Roast for 10 minutes.
  5. Flip and Finish: Flip steak tips and stir vegetables. Continue roasting for 10-15 minutes, or until steak reaches desired doneness and vegetables are tender.

Notes

  • Marinating: Marinate steak tips overnight for a more intense flavor.
  • Even Cooking: Ensure steak and vegetables are in a single layer for even cooking.
  • Customize: Use other vegetables like zucchini or mushrooms.
  • Doneness: Use a meat thermometer to check steak doneness (135°F for medium-rare).
  • Resting: Let steak rest for a few minutes after cooking.
