Crust
- 2 packages refrigerated cinnamon rolls dough (regular size, 13 oz each)
Homemade Apple Filling (Optional)

- 3–4 medium apples, peeled, cored, and diced into 1/4-inch cubes
- 1/3 cup brown sugar
- 3 tablespoons water
- 1 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1 tablespoon + 1 teaspoon cornstarch
- 2 tablespoons water
Canned Apple Filling Option
- 1 can apple pie filling
Crumble Topping
- 2 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 1/4 cup brown sugar
Toppings (Optional)
- Whipped cream, ice cream, or caramel sauce for topping
Instructions
- Preheat and prepare muffin tin: Preheat your oven to 350°F (175°C). Spray a 12-cup standard muffin tin with nonstick baking spray to ensure the bites do not stick.
- Make the crumble topping: In a medium bowl, combine the all-purpose flour, brown sugar, and chopped walnuts if desired. Cut the unsalted butter into small cubes and add them to the bowl. Using your fingers or a fork, work the butter into the flour and sugar mixture until it becomes crumbly and coarse.
- Flatten cinnamon rolls: Open the cinnamon roll packages and separate the rolls. Using a rolling pin, flatten each cinnamon roll into approximately 4-inch rounds. Lightly dust your surface with flour if the dough is sticky.
- Line muffin cups with dough: Place each flattened cinnamon roll into a muffin tin cup. Gently press the dough into the bottom and sides of each cup. Trim any excess dough that hangs over the edges.
- Prepare apple filling: For homemade filling, in a saucepan over medium heat, melt butter and add diced apples, brown sugar, water, cinnamon, and nutmeg. Cook until apples begin to soften, about 5-7 minutes. Mix cornstarch with water to create a slurry and stir into the apples. Cook until the filling thickens, then remove from heat. Alternatively, use canned apple pie filling directly.
- Fill dough cups: Spoon the apple pie filling into each dough-lined muffin cup generously.
- Add crumble topping: Sprinkle the prepared crumble topping evenly on top of the apple filling in each cup.
- Bake: Bake the apple pie bites in the preheated oven for 15-18 minutes or until the edges of the dough are golden brown and the crumble is set.
- Serve: Remove from oven and allow to cool slightly. Serve warm, topped with whipped cream, ice cream, or a drizzle of caramel sauce as desired.
Notes
- For extra texture, walnuts can be added to the crumble topping as desired.
- The homemade apple filling can be prepared ahead and stored in the refrigerator for up to 2 days.
- If using canned apple pie filling, drain excess syrup for less liquid during baking.
