Description

  • 1 1/2 cups onion, chopped
  • 1 cup bell pepper, diced
  • 6 large eggs, lightly beaten
  • 4 cups frozen shredded hash brown potatoes, thawed
  • 2 cups shredded cheddar cheese
  • 1 1/2 cups 4% cottage cheese
  • 1 1/4 cups shredded pepper jack cheese

Instructions

  1. Preheat and Prep: Preheat oven to 350°F (175°C). Grease a 13×9-inch baking dish or spray with non-stick cooking spray.
  2. Cook Bacon and Onions: Cook bacon in a skillet over medium heat until halfway done. Add onions and continue cooking until bacon is crisp and onions are softened. Drain off any excess grease.
