- 1 pound bacon, diced
- 1 1/2 cups onion, chopped
- 1 cup bell pepper, diced
- 6 large eggs, lightly beaten
- 4 cups frozen shredded hash brown potatoes, thawed
- 2 cups shredded cheddar cheese
- 1 1/2 cups 4% cottage cheese
- 1 1/4 cups shredded pepper jack cheese
Instructions
- Preheat and Prep: Preheat oven to 350°F (175°C). Grease a 13×9-inch baking dish or spray with non-stick cooking spray.
- Cook Bacon and Onions: Cook bacon in a skillet over medium heat until halfway done. Add onions and continue cooking until bacon is crisp and onions are softened. Drain off any excess grease.
- Combine Ingredients: In a large bowl, combine the beaten eggs, thawed hash browns, cheddar cheese, cottage cheese, and pepper jack cheese. Stir in the cooked bacon and onion mixture.
- Bake: Pour the mixture into the prepared baking dish. Bake uncovered for 35-40 minutes, or until a knife inserted in the center comes out clean and the internal temperature reaches 160°F.
- Rest and Serve: Let the casserole stand for 10 minutes before cutting and serving.
