Instructions
- Preheat and Prep: Preheat oven to 325°F (160°C). Line baking sheets with parchment paper.
- Combine Dry Ingredients: In a large bowl, whisk together almond flour, 1 cup of sugar, and lemon zest.
- Whip Egg Whites: In a separate bowl, beat egg whites with an electric mixer until soft peaks form. Whisk in almond extract.
- Combine and Form Cookies: Gently fold the egg whites into the dry ingredients until a moist dough forms. Use a small cookie scoop to portion dough, then roll into balls. Roll each ball in the remaining ¼ cup of sugar. Place on prepared baking sheets.
- Bake and Cool: Bake for 25 minutes, or until golden brown. Cool completely on wire racks.
