Description

A quick and delicious weeknight meal featuring savory sausage perfectly cooked alongside vibrant vegetables in the air fryer. This one-dish wonder delivers maximum flavor with minimal effort!

Ingredients

Units Scale
  • 2 medium zucchini, sliced into half circles
  • 12 ounces green beans, cut into halves or thirds
  • 1 bell pepper (any color), cored and cut into 1-inch strips
  • 2 tablespoons extra virgin olive oil (can substitute avocado oil spray)
  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 ounces fully cooked sausages (4 dinner sized links), sliced into 1/4 inch thick circles

Instructions

  1. Preheat the Air Fryer – Set your air fryer to 400°F (200°C) and allow it to preheat thoroughly. This ensures that your food starts cooking immediately when placed inside, resulting in better texture and more even cooking.
  2. Season the Vegetables – In a large bowl, combine the zucchini half-circles, cut green beans, and bell pepper strips. Drizzle with olive oil or spray generously with avocado oil spray. Add the dried basil, oregano, garlic powder, salt, and black pepper. Toss thoroughly until all vegetables are evenly coated with oil and seasonings, which helps them cook evenly and absorb the flavors.
  3. Cook the Vegetables First – Transfer the seasoned vegetables to your preheated air fryer basket, arranging them in an even layer for best results. Air fry for 10 minutes, which gives the vegetables a head start since they take longer to cook than the pre-cooked sausage.
  4. Add Sausage and Finish Cooking – After the initial cooking time, add the sliced sausage to the basket with the partially cooked vegetables. Stir everything together to combine. Continue air frying for an additional 5-10 minutes, until the vegetables are tender and the sausage is heated through with a nice caramelization on the edges.

Notes

  • For best results, don’t overcrowd your air fryer basket. Cook in batches if necessary for optimal air circulation.
  • Try different sausage varieties like Italian, chorizo, or chicken apple sausage for flavor variations.
  • This dish works well with other vegetables too – try adding mushrooms, cherry tomatoes, or red onion.
  • Leftovers keep well in the refrigerator for up to 3 days and can be reheated in the air fryer for 3-4 minutes.
  • For a lower-carb meal, use chicken or turkey sausage instead of pork.
