Corn Riblets:
- 3 ears of fresh corn
- 2 tablespoons olive oil
- 2 teaspoons taco seasoning
Sauce:
- 2 tablespoons mayonnaise
- 2 tablespoons sour cream
- 1–2 limes
- 1/3 cup cotija cheese
- 1/3 cup chopped cilantro
Instructions
- Prepare the Corn: Remove husks and silk from the corn. Wash and pat dry.
- Warm the Corn: Microwave for 2 minutes, then let cool for 5 minutes.
- Cut the Corn: Cut into riblets by slicing vertically down the center of each ear.
- Season the Corn: Brush olive oil mixed with taco seasoning onto each riblet.
- Air Fry: Air fry at 385 degrees for 10-12 minutes.
- Make the Sauce: Combine sour cream, mayonnaise, taco seasoning, and lime juice in a bowl.
- Serve: Top cooked riblets with cotija cheese, lime juice, and sauce. Enjoy!
